Formaggio pecorino a latte crudo e pasta cruda, leggera occhiatura della pasta di color paglierino, crosta fine . 

Il sapore delicato ma deciso, la pasta molto solubile dai gusti rustici dei pascoli di montagna, risaltano il suo sapore molto gradevole e raffinato.
